Nagano, not only famous for beautiful alps but sake as well.   Nagano sake is pioneer sake, meaning they are the first to develop KOBO yeast which is used through-out all of Japan. This sake is called Masumi which is one of the most respected sake breweries in all of Japan. This is the brewery that developed Kobo yeast that is used today. What I was drinking was a namagenshu.   This was the finest genshu I ever tasted.  Normally, I never drink Genshu but this one was an exception. Fruity, dry, mellow, full of complex flavors.   Genshu is a undiluted, giving it a higher alcohol content.  Nama means unpasteurized.
